Caramelised onion sausage rolls

I don’t know about you but I love a sausage roll. They only take 30 mins to make and are always SO yummy. These ones were made with a layer of caramelised onion chutney around the sausage meat and a sprinkling of Parmesan. We had these as a hangover cure last weekend and they hit the spot. Save and recreate ️

Ingredients (10-12 sausage roll portions):
1 sheet ready rolled puff pastry (or make your own)
6 tbsp caramelised onion chutney
375g sausage meat
1tsp salt
1tsp pepper
1 tsp Dijon mustard
1tsp oregano
1tsp paprika
1 egg
2tbsp bread crumbs
2tsp grated Parmesan
1 onion, finely chopped
2 garlic cloves, finely chopped

Method:
1. Put your oven to 180 degrees
2. Fry your onion in 1tbsp oil until soft for 5 mins, add your garlic and fry for another 3 mins
3. Whisk your egg, and pour 3/4 of it into a bowl with the sausage meat, the herbs and spices, seasoning, bread crumbs, mustard, onion and garlic
4. Mix through with your hands until everything is evenly distributed
5. Roll out your pastry, cut it into 2 parts parallel to the shorter length
6. Spread 3tbsp onion chutney across each piece, leaving a 2 inch gap down the left side
7. Shape the sausage meat in the middle of the red onion chutney, in a line down towards you, evenly spread so it’s like a cylinder from the top down
8. Egg wash the 2 inch gap, then roll tightly until rolled up
9. Put on a tray, egg wash, sprinkle on the Parmesan and a grind of pepper then bake for 25 mins or until golden brown
10. Leave to cool for 10 mins before serving
