Courgette kofta curry recipe

Happy friends ️this recipe is based on one from and it is SUCH A WINNER ️ the koftas are crunchy and tangy and the sauce is spicy and smooth. I used yellow courgettes which is why the koftas aren’t green but you can use either

Ingredients (3-4 people):
1 tbsp oil
2 onions, roughly chopped
1 green chilli, roughly chopped (reduce if you don’t like spice)
2 garlic cloves, roughly chopped
1cm fresh ginger roughly chopped
2 large tomatoes, roughly chopped
2 tbsp tomato purée
0.5 tsp salt
0.5 tsp sugar
0.5 tsp chilli powder
0.5 tsp garam masala
0.5 tsp ground turmeric
1 tbsp double cream (or creme fraiche)

375g courgettes (2 medium)
50g gram flour (chickpea flour)
0.5 tsp salt
0.5 tsp chilli powder
0.5 tbsp lemon juice
Oil for frying

1. For the curry, head the onions and oil and cook for 20 mins or until deep brown.
2. While these are cooking grate the courgettes for the koftas, and squeeze any water out of them. Put them in a bowl with the gram flour, salt, chilli powder and lemon, then mix.
3. When the onions are done, Add the chilli, garlic and ginger and cook for 2 mins. Add the tomatoes and tomato purée and cook with the lid on for 10 mins, stirring occasionally.
4. Whilst that’s cooking, make balls with your courgette mixture, then flatten them to patties and fry them in the oil on a very low heat for 5-10 mins each side so they cook through. They should be golden brown.
5. While they are frying, blend the tomato mixture, put it back in the same pan and 200ml water, the salt, sugar and spices. Cover and cook for 5 mins.
6. Serve your koftas ontop of your sauce with the creme fraiche rippled through it.
