Dan Dan glass noodles recipe

Dan Dan noodles are my FAVE and my recipe always turns out delish (even though I substituted quite a few ingredients when I made these). They are peanutty, spicy and rich and yuuuum. Save this and recreate it!

What you will need (serves 3 large portions):
Noodles:
3 nests of fine egg/wheat noodles (I got mine from my local Asian supermarket)
Drizzle sesame oil

Pork:
500g minced pork
1/2tsp sugar
2 spring onions
2tbsp rice wine
1tsp fish sauce
1tsp dark soy sauce
1tbsp oyster sauce
1tbsp sesame oil
1tbsp fresh ginger, finely chopped
1tbsp sesame seeds

Sauce:
2 tbsp white wine vinegar/rice wine vinegar
3tbsp unsweetened and unsalted peanut butter/tahini
3tbsp light soy sauce
2 garlic cloves finely chopped
1 finely chopped spring onion
1tbsp honey
1/2tsp crushed peppercorns (Sichuan if you can find them)

Toppings:
Sesame seeds
Chilli oil
Peanuts (optional)
Spring onions (optional)
Fresh chilli (optional)
Any warm cooked vegetables (optional)

Method:
1. Whisk all sauce ingredients together and set aside
2. Add sesame oil and pork to a frying pan and cook until starting to go crispy (can take 10/15 mins)
3. Add in all of the other pork ingredients and keep cooking until crispy/sticky and dark brown (don’t burn so keep tasting)
4. Cook the noodles (use packet instructions), drain and mix with a drizzle of sesame oil to stop them from sticking
5. To serve: add the sauce to the bottom of the bowl, pile on any veg you have and the noodles, then top with the crispy pork and all of the toppings (I use a lot of chilli oil)
