Flat iron steak with zingy chimichurri

I chose to order these beautiful flat iron butchers steaks (SUCH good quality), and the ingredients to make chimichurri which is my go to summer steak sauce. I also got some fresh asparagus, salad, potatoes and shallots to make a couple of side dishes.

Ingredients (2 people):
2 flat iron steaks
1 red chilli, de-seeded
Large handful fresh parsley
70ml olive oil
0.3tbsp red wine vinegar
0.5tsp dried oregano
3 cloves garlic
2 large pinches salt
Few grinds of pepper

Method:
1. Finely chop your chilli, parsley and garlic, then mix it with the oil, salt and pepper, oregano and vinegar. Set aside while you cook the steak.
2. Put a frying pan or griddle on high heat. While that is warming up, add a drizzle of oil as well as a generous amount of salt and pepper to your steaks, rubbing it all over.
3. When your pan is really hot (test with a flick of water it should sizzle and disappear), put your steaks in. I did mine for 2 mins each side for rare and 2.5 mins each side for medium rare but mine were quite thick!
4. Remove your steaks from the pan and put them on a chopping board and cover with foil. Prep all of your side dishes and once the steaks have rested for 5-10 mins you can slice and serve!
