Meatless meatballs with almond pesto

Happy people! I was some of plant based products to try last week and I was really craving a warming pasta dish, this fit the bill perfectly. I used their mince to make these meat free balls and baked them in a rich tomato sauce, and topped it with some cheddar (remove to make it ) and some homemade pesto. I served it with some spaghetti. I am impressed with the quality of their products, I would definitely buy them again in a supermarket for when I’m not eating meat.

Ingredients (3-4 people):
1 pack mince
1 tin tomatoes
2tbsp bread crumbs
Handful parsley
2 tbsp tomato purée
1 vegetable stock cube
2 onions
2 cloves garlic, finely chopped
1 egg (remove for vegan)
A small pack basil
4tbsp olive oil
Handful almonds
Pasta for 3
2 tbsp Parmesan (remove for vegan)
A few slices of cheddar (remove for vegan)

Method:
1. Blend 1 onion, the parsley, the breadcrumbs together. Add in the mince and 1 egg and blend briefly. Season.
2. Chop another onion finely and fry for 2 mins in a dish that can go in the oven. Add the garlic and fry for 2 mins. Add the tinned tomatoes, tomato purée and stock cube with 200ml water. Simmer until halved and season.
3. Put your oven to 180. While that’s simmering, make your blended mixture into balls and fry them off in a little oil until browned on all sides then set aside.
4. Add your meatballs to the sauce, then add the cheese slices and bake for 15 mins.
5. Blend the remaining ingredients together for the pesto, season to taste. Cook pasta to serve with the dish. Top the meatballs with pesto and serve!
