Melt in the middle fish cakes and tartare sauce

I’ve always wanted to give these a go and I had some leftover cuts of salmon bits which was perfect! I love a fish cake (as long as they aren’t too potato-y), and I think they are served perfectly with some salad and a good, zingy tartare sauce. Save this and recreate!

Ingredients (4 fish cakes):
200g potato, peeled and boiled until soft
250g salmon bits or fillet, skin removed
1tsp mayo
2tsp Dijon mustard
Small handful chopped parsley
Small handful chopped dill
Squeeze of lemon juice
2 spring onion, thinly sliced
4 small cubes cheddar (1.5cm)
75g panko breadcrumbs
3tbsp plain flour
1 egg, whisked

Sauce:
6tbsp mayo
3 tbsp capers, drained
1 shallot
Large squeeze of lemon juice
Small handful parsley
Small handful dill

Method:
1. Cook your salmon in the oven with a slice of lemon ontop if you have it, a bit of olive oil and some salt and pepper. Fillet for 11 mins, bits for 4 mins. Remove from the oven and leave to cool.
2. Lightly crush your potatoes so they are mashed with lumps. Mix them with the herbs, spring onion, mayo, mustard, lemon juice and season to taste. Flake in the salmon and mix gently.
3. Put the flour in one bowl, the egg in another and the bread crumbs in another. Grab 1/4 of the mixture, flatten it to a large patty then place the cube of cheese in the middle. Gently fold over the edges and shape into a fish cake shape, keeping the cheese in the middle. Once all done, refrigerate for an hour if you have time.
4. Put your oven to 180. Put a large pan with 2tbsp oil on medium (more if you like). Coat your fish cakes in the flour, then the egg, then the breadcrumbs and add them to the frying pan. Fry for 5 mins on each side or until golden, then place on a baking tray and roast for 8 mins until a deep golden.
5. Whilst that’s cooking make the tartare sauce. Chop the shallots and capers and herbs finely. Mix it all with the mayo and juice and a pinch of salt and pepper. Season to taste. Leave the fish cakes to cook for 5 mins after the oven. Serve the fish cakes with salad and tartare!

  1. That is amazing! I will try this but il make it lower carb! I’ve done this with chicken but not fish so good
