Saag paneer recipe
Happy Monday! Saag paneer/palak paneer is one of my favourite vegetarian curries. I love spinach and in this creamy dish it is delicious. I did a lot of research into recipes and combined a few (thanks for the recommendations!). Save and recreate ️
Ingredients (4 people):
300g paneer, cubed
300g spinach leaves
2 green chillis
30g cashew nuts, soaked in warm water for 1 hour
1 large onion roughly chopped
Half a tin of chopped tomatoes
2 bay leaves
1.5tsp cumin seeds
1tsp garam masala
1 tsp turmeric
4 garlic cloves, crushed
2 inch piece of ginger, finely chopped
4 tbsp double cream
Juice of half a lemon
Handful coriander, chopped
Method:
1. Fry your paneer in 1tbsp of oil until golden and crispy. Set aside.
2. Pour a kettle of boiling water over your spinach in a sieve or colander, then run cold water over it straight away until cool.
3. Blend your spinach and chillis with 100ml water and set aside. Add your cumin seeds, bay leaves to a pan and fry for a couple of mins or until fragrant. Add in the turmeric and fry for a minute. Add the garlic and ginger and cook for a minute being careful not to burn.
4. Blend your onion with the cashew nuts until smooth. Add to the spices, with the garam masala and fry for 7-10 mins, stirring. Blend your tomatoes and add these to the pan. Cook for another 5 minutes. Add 1tsp salt and your spinach. Fry for 3 mins or until cooked through. Taste and season. Add in the cream, paneer and coriander, heat through and serve with rice or naans.
